Watermelon Tomato Gazpacho

Watermelon tomato gazpacho, i.e. summertime in a bowl
3 cups watermelon, seeded and pureed in a blender
1 cup seeded watermelon, diced small
1 cup tomato, diced small
1 cup peeled cucumber, diced small
2 tablespoons lime juice
1 small handful cilantro leaves
1 teaspoon minced ginger
1/2 jalapeño, seeded and minced
1 green onion
1 teaspoon sea salt
black pepper

Combine the pureed watermelon with the other ingredients in a large bowl. Stir. Serve in chilled bowls with a bit of mint on top.
