Cinnamon Pumpkin Soup

Heat 1 tablespoon olive oil in a large sauce pan. Add 1 diced onion and cook for about 4 minutes. Add 3 minced garlic cloves, 1 teaspoon cinnamon, 1 teaspoon cumin, 1/4 teaspoon nutmeg, salt and pepper to taste and cook for 1 minute. Add 31/2 cups vegetable broth or water, 1 15-ounce can pure pumpkin and 1 tablespoon chipotle chili pepper. Simmer 20 minutes and puree. Garnish with goat cheese or Greek yogurt.
